Wspólne informacje do wiązki zadań
A class investigates pigment loss from red cabbage tissue as temperature changes. Four equal-sized discs are rinsed, placed in 12 cm³ of the same buffer and incubated for 25 minutes. Discs are removed, the liquid is mixed and absorbance is measured. Three independent trials are performed at each of 35, 45, 55, 65, 75 and 85 °C.
Polecenie
The mean results are shown. Use membrane structure to explain the relationship.

Odpowiedź z klucza
Membrane permeability to pigment increases as temperature rises towards 75 °C. ✔
Greater movement and separation of phospholipids destabilize the bilayer. ✔
At sufficiently high temperatures membrane proteins lose their functional three-dimensional structure. ✔
By 75 °C the measured release has reached a plateau, consistent with membrane disruption already having reached its full effect in this model. ✔
Schemat punktowania
Award any 3 points; maximum 3. Link pigment passage to permeability. Fluidity alone or proteins being damaged without structural change is insufficient. Do not invoke cholesterol as the relevant plant-membrane explanation.
